While this dumplings recipe will take about three hours to cook, everything comes together in a single Dutch oven, meaning this one-pot meal will require little clean-up afterwards. This is the ultimate hearty and delicious family-friendly meal that is easy to reheat and makes great leftovers. Serve with a side salad or just garnish with chopped parsley for an added touch.

Ingredients

  • 2 lbs ham (with bone in)

  • water to cover

  • 2 med sweet potatoes (cubed)

  • 2 cups gluten free flour

  • 2 eggs

  • 1/2 cups heavy cream or buttermilk

  • 1 can French cut green beans (drained)

  • salt and pepper to taste

Instructions

  • Place ham in large pot and cover with water.
  • Bring to a full roiling boil, and then reduce to a simmer, uncovered, for 2 hours or until mixture is reduced by half.
  • Cut ham into cubes and set aside.
  • Place potatoes in broth to cook.
  • Meanwhile in a large mixing bowl, mix flour, eggs, and heavy cream to form soft dough. (adding cream as necessary)
  • Roll dough to 1/8″ to 1/4″ thickness, and cut dough into 1″ by 1 1/2″ rectangles
  • Drop dough into broth one piece at a time.
  • Cook (covered) until dough is done.
    agitating the dumplings with an aggressive simmer or boil will make them fall apart
  • Add ham and green beans, cook til heated through.
  • Salt and pepper to taste

Notes

  • It is so easy to cut the dumplings with a pizza cutter and much quicker!
  • If you’d like a more hearty broth for the base:
    – 2 ribs celery with leaves, rinsed and cut into large chunks
    – 2 large carrots, unpeeled, rinsed and cut into large chunks
    – 4 sprigs fresh parsley
    – 2 bay leaves
    – 1/2 teaspoon whole peppercorns
    Make sure to strain these out when you remove the ham!

If you happen to not like ‘slipperies’ or rolled dumplings, you can always make up a biscuit dough, and cook on top instead. I personally will eat any and all dumplings that are safe for me!
